A plecat s\u0103 lucreze \u00een str\u0103in\u0103tate \u201dtocmai pentru c\u0103 voiam s\u0103 m\u0103 dezvolt profesional \u0219i s\u0103 c\u0103l\u0103toresc\u201d. A avut ambi\u021bia dar \u0219i \u0219ansa de a lucra \u00een \u201dbuc\u0103t\u0103rii cu stele Michelin\u201d, mai \u00eent\u00e2i la Berlin (Waldorf Astoria, Les Soliste by Pierre Gagnaire), dup\u0103 care a luat drumul Californiei unde a descoperit o parte din lumea Zagat a gastronomiei. \u201dLos Angeles \u0219i Nappa Valley au fost sta\u021biile \u00een care m-am oprit. Experien\u021ba de la Auberge du Soleil (Nappa) a fost sus de tot. Buc\u0103tarul de la care am furat cel mai mult r\u0103m\u00e2ne Robert Curry. Oamenii din breasl\u0103 m-au impresionat, se comport\u0103 cu modestie rar\u0103. \u00cen America am observat c\u0103 to\u021bi buc\u0103tarii sunt deschi\u0219i s\u0103 d\u0103ruiasc\u0103, s\u0103 te \u00eenve\u021be c\u00e2t mai mult \u0219i asta contat extrem de mult \u00een formarea mea\u201d. Chef Alex s-a \u00eentors \u00een Rom\u00e2nia anul trecut r\u0103spunz\u00e2nd la o invita\u021bie-provocare de a pune \u00een practic\u0103 la pensiunea ATRA, dou\u0103 concepte care se \u00eembin\u0103 de minune &#8211; Fine Dining \u0219i Farm to Table. \u201dM\u0103 reg\u0103sesc \u00een ambele. \u0218tiu c\u0103 e greu, sunt concepte pe care sper s\u0103 <\/span>le <span lang=\"ro-RO\">fac s\u0103 creasc\u0103. Principalul obstacol \u00eel reprezint\u0103 furnizorii, ce ar trebui s\u0103 fie produc\u0103tori locali<\/span>. A<span lang=\"ro-RO\"> trebui<\/span>t<span lang=\"ro-RO\"> s\u0103-i g\u0103sesc, s\u0103 v\u0103d cum lucreaz\u0103, cum g\u00e2ndesc. Mi-am propus s\u0103 valorific c\u00e2t mai multe din resursele locale naturale, mergem pe chestiuni simple pe care trebuie s\u0103 le p\u0103str\u0103m la un nivel de calitate constant. Am c\u0103utat \u00een pie\u021be locale, am c\u0103utat pe dealuri \u0219i mun\u021bi. \u00cen plus ne-am creat propria gr\u0103din\u0103, de unde ne asigur\u0103m o parte din vegetale, legume \u0219i plante aromatice. Dac\u0103 vom reu\u0219i \u00een viitorii cinci ani s\u0103 folosim peste 40% ingrediente locale vom vorbi de un succes enorm.\u201d<\/span><\/span><\/span><\/p>\n<p align=\"LEFT\"><span style=\"color: #000000;\"><span style=\"font-size: large;\">Furnizorii!<span lang=\"ro-RO\">?<\/span> <span lang=\"ro-RO\">\u00ce<\/span>n regi<span lang=\"ro-RO\">a discret\u0103 a \u00eent\u00e2lnirii noastre, coordonat\u0103 din umbr\u0103 de Mariana Popa, omul cu marketingul la Pensiunea ATRA, a venit pe \u201dscen\u0103\u201d Rare\u0219 Constantinescu. Are 30 de ani \u0219i a cumulat o experien\u021b\u0103 foarte divers\u0103. El este omul cu br\u00e2nzeturile \u0219i ca\u0219cavalul. Arat\u0103 ca scos din cutie \u0219i nici n-ai spune c\u0103 a venit de la st\u00e2n\u0103. \u201dEu sunt un b\u0103iat de asfalt, am tr\u0103it \u00een Bucure\u0219ti. N-am avut tangen\u021b\u0103 cu oaia \u0219i vaca. Am plecat \u00een Europa, am lucrat \u00een domeniul marketingului \u0219i publicit\u0103\u021bii \u00een Italia \u00een regiunea Veneto. Am fost \u0219i \u0219ofer pe o dub\u0103 de transport, iar dup\u0103 aia m-am re\u00eentors la publicitate. Inten\u021bia mea a fost s\u0103 dezvolt ceva al meu \u00een Italia dar costa prea mult. A\u0219a c\u0103 m-am \u00eentors acas\u0103 \u0219i, \u00eempreun\u0103 cu rudele mele care se pricep la br\u00e2nzeturi ne-am apucat s\u0103 facem o mic\u0103 ferm\u0103 aici \u00een mun\u021bii Doftanei. Am pornit din 2012 cu capital propriu, am cump\u0103rat animale, am investit \u00een mijloace de transport \u0219i tehnologii de prelucrare. Ne-am dorit o afacere independent\u0103. Am pornit cu peste 20.000 de lei. Acum am ajuns s\u0103 producem br\u00e2nzeturi de calitate, preferatele fiind telemeaua \u0219i ca\u0219caveaua. Am avut norocul s\u0103-l \u00eent\u00e2lnesc pe managerul pensiunii cu care am mers pe o dubl\u0103 colaborare: furnizez pensiunii produse iar sus la munte am dezvoltat turismul la st\u00e2n\u0103 cu experien\u021be inedite\u201d. Dincolo de pasiune Rare\u0219, care se g\u00e2nde\u0219te s\u0103 creasc\u0103 num\u0103rul de vaci, se love\u0219te de un aspect foarte greu de rezolvat. Nu g\u0103se\u0219te \u00een zon\u0103 for\u021b\u0103 de munc\u0103. Tinerii nu mai vor la coada vacii. Oamenii din sat sunt foarte re\u021binu\u021bi, au o mentalitate \u00eenchis\u0103. \u201dPoate a\u0219a a\u0219 fi r\u0103mas \u0219i eu, dac\u0103 nu a\u0219 fi plecat s\u0103 lucrez \u00een str\u0103in\u0103tate. Am o viziune, \u0219i cred c\u0103 acesta ar putea fi drumul pentru a dezvolta afacerea. S\u0103 integrez activitatea mea \u00eentr-un proiect sus\u021binut de fonduri europene. Vom vedea!\u201d <\/span><\/span><\/span><\/p>\n<p lang=\"ro-RO\" align=\"LEFT\"><span style=\"color: #000000;\"><span style=\"font-size: large;\">Leontin Alexe este un alt furnizor al pensiunii ATRA. El este omul cu ciupercile \u0219i fructele de p\u0103dure. Desf\u0103\u0219oar\u0103 aceast\u0103 activitate de vreo 7 ani. S-a intresectat \u00eentr-o pia\u021b\u0103 local\u0103 cu Chef Alex care i-a propus s\u0103 livreze regulat, c\u00e2nd e sezon, produse proaspete pentru restaurantul pensiunii. Omul e plin de pove\u0219ti, inclusiv cu \u00eent\u00e2lniri cu ur\u0219ii, la zmeur\u0103, la mure, la afine, aventuri din care a sc\u0103pat nev\u0103t\u0103mat. Adic\u0103 vrea s\u0103 ne spun\u0103 c\u0103 \u201dvia\u021ba asta de culeg\u0103tor nu e deloc simpl\u0103, are riscurile ei. C\u00e2t despre animalele p\u0103durii, trebuie s\u0103 \u0219ti cum s\u0103 le iei. De c\u00e2nd colaborez cu ATRA a\u0219 putea spune c\u0103 \u00eemi e cu mult foarte bine.\u201d<\/span><\/span><\/p>\n<p lang=\"ro-RO\" align=\"LEFT\"><span style=\"color: #000000;\"><span style=\"font-size: large;\">Am l\u0103sat la sf\u00e2r\u0219it recitalul fine dining semnat de Chef Alex. Din cele 7 prezent\u0103ri, ce au pus \u00een valoare materii prime proaspete, locale, ne-au re\u021binut aten\u021bia \u00een mod special Pieptul de ra\u021b\u0103 cu piure de verde\u021buri, cartofi noi cop\u021bi \u0219i fasole verde (excelent gust); Ceaiul din izm\u0103 \u0219i cimbri\u0219or (not\u0103 maxim\u0103 pentru design gastronomic), respectiv Urda frecat\u0103 cu m\u0103ce\u0219e, fagure de miere \u0219i migdale (desert de top ce reune\u0219te aromele locale \u0219i experien\u021bele interna\u021bionale).
